Why we chose it
This blend is a very well-executed balancing act between three varieties grown together on the same estate at an altitude of 1,000 meters. Picual provides the character, Hojiblanca the structure, and Picudo rounds it out. When I taste it, I notice that each variety contributes without overpowering the others—and that only happens when the proportions are carefully considered and the olives share the same terroir.
Pairing
How to enjoy it
This extra virgin olive oil is ideal for complementing intense flavors, such as meats or highly flavorful fish. It can also be used in baking with dark chocolate, giving our desserts a different and unique touch.

The mill
Quaryat Dillar
This oil mill, which owes its name to the old name of the town of Dílar on the outskirts of Granada, produces Extra Virgin Mountain Olive Oil.
Managed by the Velasco brothers, it carefully produces a range of premium Picual, Arbequina, Blend, and organic oils, as well as a gourmet delight of lemon seasoning based on Arbequina oil.
In addition to their farms, they work with traditional farmers to help preserve and care for varieties like Picudo, producing Extra Virgin Olive Oils.
