From Granada
Quality is decided before the bottle: harvest, processing, storage and tasting.
The Molino & Cata method · from tree to bottle
How we work
A measurable method, from tree to bottle
Every project follows the same discipline. What is not measured cannot be improved; what is not tasted cannot be sold.
01
Diagnosis
We visit the field and the mill, review data and taste your oils to establish the starting point.
02
Technical plan
We define quality objectives, the harvest schedule, and batching and processing criteria.
03
Execution
We support critical decisions during the campaign: maturation, milling and storage.
04
Evaluation
Professional tasting and parameter control: acidity, defects and sensory profile.
05
Market
We prepare the brand, content and channel so the oil reaches the right customer.

Frequently asked questions
Before writing to us
If you don't find your answer, tell us your case and we will resolve it in 24–48 h.
01 Do you work with small mills and cooperatives?
Yes. We adapt the scope to each project, from a one-off consultation on harvest time to support throughout the entire campaign. You don't need a large volume to produce exceptional EVOO.
02 Do you conduct professional EVOO evaluation for competitions and guides?
Yes. We conduct professional tasting, identify defects and virtues, and guide the presentation of each lot according to its profile and objectives.
03 When in the campaign is it best to start?
Ideally before harvest. Determining the optimal collection time is the decision that has the greatest impact on final quality, so the earlier we get involved, the more room we have to adjust.
04 Is the training in-person or online?
Both. We provide in-company training at your mill, sessions in our tasting room in Granada, and online programs. Sensory tasting always includes guided practice with samples.
05 What does the in-house composting service include?
We design the utilization of olive grove and mill by-products —pomace, pits, leaves, and pruning waste— to convert them into your own compost, reducing costs and footprint while closing the cycle on your farm.
06 Can you also handle selling the oil?
Yes. We cover B2B marketing and the HORECA channel, as well as the digital presence and advertising needed for the brand to reach the right customer.
