What we look for
The same criteria as the shop.

Extra virgin onlyNo other category of oil is accepted in the shop.

Early harvestOlives harvested while green, with more fruitiness, bitterness and spiciness.

From the current campaignWhen the campaign changes, we remove all previous references.

Must pass the tastingMercedes assesses persistence, complexity and harmony, and tastes every new batch again.
