The question we get most in the shop is not which is the best oil in the world. It is this: why does this one cost €18 and that other one 4?

This pillar answers that. What you are paying when you pay too much, what you are missing out on when you pay too little, and how to tell the difference before you get to the checkout.

Getting started

If you are coming from supermarket oil and do not know where to start, your first real extra virgin oil is a guide without snobbery. When you want to refine your choices, the four objective criteria that separate a real premium from a pretty bottle are in how to choose a premium EVOO.

Where the price comes from

A 500 ml bottle at €18 is not a brand whim: it is about five kilos of selected olives, picked early and milled within hours. The breakdown, euro by euro, is in why premium EVOO is so expensive. And at the other end of the market, what it really means when «oil prices collapse» we analyze in the downward pressure on prices at the source.

Who you buy from

Buying well also means knowing who is behind it. Cooperatives move more than 70% of Andalusian oil and some produce extraordinary oils: the reasons to choose them are in cooperative oil, and the ones we liked most, in the five best cooperative oils. At the opposite end are the Spanish brands more famous in Seoul or New York than here.

Awards, with caution

An award does not guarantee that you will like an oil, but it does mean that someone has tasted it seriously and blindly. The Mario Solinas of the International Olive Council are the most demanding benchmark; our take on the rest of the competitions is in the most awarded EVOO. What exactly each guide measures —EVOOLEUM, Iberoleum, Jaén Selección— and how much each seal is worth we break down in EVOO awards and guides; the eight Jaén Selección 2025 have their own profile.
