Mercedes Uceda and a participant tasting olive oil with cobalt tasting glasses in the oleoteca
Cobalt tasting glass, the official one of the International Olive Council.

How the tasting works

Blind tasting, like the professionals.

The glass is cobalt blue on purpose: it hides the colour so that your nose and palate decide. It is the method of international competitions, and you practice it from the first minute.

  1. Warm up

Covered glass in hand, at about 28 °C. Slow circular movements.

  2. Smell

Uncover. Three short inhalations to recognize the fruitiness.

  3. Taste

A small sip. Spread the oil around your mouth.

  4. Inhale

Breathe air through the sides to notice the bitterness and spiciness.

  5. Retronasal

Exhale through your nose. This is where the real complexity appears.

  6. Discover

The profile of each oil is revealed: variety, harvest, altitude and acidity.

Varieties we taste

6 varieties
  • PicualJaénIntense. Tomato leaf, marked bitterness and spiciness. Very stable.
  • HojiblancaCórdoba · MálagaGreen almond and elegant spiciness. Somewhere between sweet and bold.
  • ArbequinaCatalonia · AragonMild, apple and sweetness. The gateway to tasting.
  • CornicabraToledo · Ciudad RealRipe fruit, a touch of avocado and a long finish.
  • PajareraMinority varietyUncommon and hard to find outside its region.
  • LucioNative to GranadaA variety from Granada that rarely leaves the province.

Ask us on WhatsApp
How long does a tasting last and how much does it cost?
The oil tasting lasts 90 minutes and costs €39 per person. The pairing lasts 2 hours and costs €99 per person, from 4 people; the masterclass, 3 hours and €129. The private tasting, €45 per person, from 2 people. VAT included.
Do I need to know about oil?
No. The oil tasting is designed to start from scratch. If you already have a foundation, the masterclass covers production, attributes and defects.
Do I need to speak Spanish?
No. We conduct the tastings in Spanish or English, at no extra cost. Choose the language when booking.
What is a blind tasting?
The oils are served in a cobalt blue glass that hides the color. This way you judge them only by aroma and flavor, as in competitions.
Can children come?
Yes. To the shop, always. At the tastings, babies do not pay and children up to 14 years old have a reduced rate; indicate this when booking. The masterclass is for adults due to its duration and technical focus.
How far in advance do I need to book?
At least 4 hours in advance, if spaces are available. You can book an open tasting by yourself; the private one, from 2 people, and the pairing, from 4. The maximum capacity is 15 people.
Can I cancel or change the date?
Yes, free of charge up to 48 hours before the tasting.
Can I buy the oils I taste?
Yes, at the olive oil shop after finishing or in the online store. You can also add a bottle or a tasting kit to the reservation.
Which varieties are tasted?
They change with each harvest. The usual ones: picual, hojiblanca, arbequina, cornicabra and minority ones like pajarera or lucio, native to Granada.
Do you do tastings for groups and companies?
Yes. The private tasting is only for your group, from 2 people, at €45 per person. For celebrations and company events of up to 20 people, we prepare a custom quote, with an invoice. Agencies and DMCs have net rates.
Can I give a tasting as a gift?
