Technically, they are not extra virgin olive oils: by adding another ingredient, they become olive oil-based condiments. The ones we have chosen start from a good oil base. In several, such as the Quaryat with lemon or the Peña Luna with mandarin and with Espelette pepper, the fruit or spice is ground together with the olive, without added essences.
