    Why we chose it

Last year we ran out of a good Royal. It’s a complex variety. When we were batching the picual, we tasted it and said, “Come on, you’re not getting away.”

    How to enjoy it

La Royal de Cazorla is a complex and unusual native variety from the Cazorla mountains. It has 4 out of 5 for fruitiness and spice and 3 out of 5 for bitterness: it is gentler than a Picual and finishes with strength.

With grilled or roasted vegetables: artichokes, asparagus, roasted peppers, or mushrooms. Its complexity is more noticeable in simple dishes.

With grilled white fish skin-on (hake, sea bream, or whiting) or confit cod. The moderate bitterness does not overpower the fish, and the spice brings it to life.

With white meats and small game: free-range chicken, rabbit, or partridge, added raw at the time of serving.

With semi-cured goat cheeses and on toast with tomato or avocado. And to understand the variety, try it alongside a Picual: same province, different language.

    Oleandaluza

    The mill

    Oleandaluza
