Deciding the exact harvest day is the decision that has the greatest impact on quality. We make it based on the ripeness index, fruit tasting, and data — not the calendar.

RIPENESS INDEX 3.2 / 7
MOISTURE 52%
OIL CONTENT 18.4%
WINDOW NOV 18–24
DECISION Bring forward 4 days
Sample values. Each farm defines its own profile.
What's included
One day late, one category down
Bringing forward or delaying the harvest changes the oil yield, the sensory profile, and the selling price. Without technical criteria, green fruit is lost — and with it, the polyphenols and volatiles that separate a singular EVOO from a decent one.
Ripening monitoring
Ripeness index and fruit sampling by farm and variety.
Yield vs. quality
The point where oil yield and the sensory profile balance out.
Fruit tasting
Sensory evaluation of the fruit before harvest to set the window.
Harvest plan
Schedule by plot
Fruit management
Harvesting
Optimal window
The exact day and timeframe for each variety and plot.
How we work
An orderly process, with criteria at every step
01
Sampling
We take fruit from each plot and variety and measure ripeness and moisture.
02
Fruit tasting
We evaluate the sensory potential of each plot by nose and palate.
03
Optimal window
We cross-reference data and tasting to set the harvest day and order.
04
Coordination
We align the crew
Who it's for
Designed for your project
- Oil mills looking to move up a category
- Brands with their own farm
- Cooperatives that want to differentiate lots
01 When should we start?
Before the fruit turns. The sooner we sample, the more time there is to plan the harvest and the order of entry.
02 Do you work by variety?
Yes. Picual, Hojiblanca, Arbequina, or Cornicabra have different windows; each is evaluated separately.
03 Is an in-house laboratory necessary?
No. We combine field measurements with expert tasting; the laboratory is used where it adds value.
Shall we start with one farm?
One visit and one sampling are enough to set your harvest window.
