    Picual: intensity and character

If Picual had to be described in a single word, it would be determination. It is the most cultivated variety in Spain—and possibly in the world—with its epicenter in Jaén and a notable presence in Granada and Córdoba. Its oil is recognized for its intense fruitiness, its marked bitterness, and a spiciness that makes itself felt, especially when it is early harvest.

On the nose, it recalls freshly cut grass, olive leaf, tomato plant, and green almond. On the palate, that strength translates into great stability, which makes it ideal for cooking at high temperatures without losing its properties.

Recommended uses: long-simmering stews, frying, homemade preserves, salad dressings with strong-flavored ingredients such as tomato or arugula.

    Hojiblanca: balance and versatility

Hojiblanca owes its name to the silvery shine on the underside of its leaves. It is grown mainly in Córdoba, Málaga, Sevilla, and part of Granada. Compared to the strength of Picual, Hojiblanca presents itself as an invitation to balance: a sweet start, moderate bitterness, and an elegant spiciness that arrives at the end.

In aroma, it can remind us of aromatic herbs, almond, artichoke, and apple. It is a versatile variety in the kitchen: it works well both raw and in preparations, and it is especially appreciated in sauces and creams.

Recommended uses: stir-fries, oven roasting, cold soups such as ajoblanco, mayonnaises, or homemade aioli.

    How to make the decision

There is no universal answer, but there are clues to get it right:

    • If you like firm flavors with character, Picual will be your faithful companion.
    • If you prefer a versatile oil that adapts to everything, Hojiblanca will give you more options.
    • In case of doubt... have both and let each recipe tell you which one to open.

    Frequently asked questions

What is the main difference between Picual and Hojiblanca?

Picual is intense: marked green fruitiness, notable bitterness, and spiciness that stays in the throat. Hojiblanca is more balanced: medium fruitiness with notes of grass and almond, a sweet start, and a slightly spicy finish. Both excellent, but for different moments and palates.

Which oil is better for cooking, Picual or Hojiblanca?

Picual withstands high temperatures better due to its high content of oleic acid and polyphenols, ideal for frying and stews. Hojiblanca shines more raw: salads, toasts, fish. The choice depends on whether you want the oil to dominate the dish or accompany it with elegance.

Can I have both at home or is it redundant?

Not only can you, but you should. Having a Picual and a Hojiblanca is like having coarse salt and flake salt: each has its moment. Picual for red meats, legumes, and hearty dishes. Hojiblanca for salads, fish, and breakfasts. Once you differentiate them, you will use one or the other depending on the dish.

Which of the two is healthier?

Picual has a higher concentration of oleic acid and polyphenols, which makes it the variety with the best target nutritional profile. But Hojiblanca is also extraordinarily healthy. The nutritional difference between both is smaller than the difference between either of them and a refined oil. Choose the one you like most.
