    Why we chose it

It’s a textbook Arbequina, as northern Arbequinas ought to be. If we didn’t know it came from the foothills of the Moncayo, we’d say it was the quintessential Les Garrigues variety. We also chose it because Salz has had a rough time with yields, so it’s time to give it its due.

    Pairing

    How to enjoy it

A northern Arbequina like the ones from days gone by: sweet, with bitterness at 1 and spiciness at 2, and an almond and banana finish. It calls for simple food, nothing loud.

For sauces and emulsions: mayonnaise, aioli, or citrus vinaigrettes. It adds a green apple aroma without altering the flavor of the sauce.

With white fish and steamed seafood, with prawn or scallop carpaccio, and with tender vegetables: zucchini, green beans, or potatoes boiled with coarse salt.

For breakfast, on toast with tomato or fresh cheese. For dessert, over red berries, plain yogurt, or a yogurt sponge cake. The floral notes do the rest.

And for the youngest members of the family: smooth, aromatic, and without harsh edges.

    The mill

    SalzySalz
