    Why we chose it

Rosa López is one of the most interesting people in the industry. She is intelligent, entrepreneurial, and a woman. This year her Picual came in second in the Ministry's competition. It is a pleasure to have her oils at Molino & Cata.

    How to enjoy it

A Picual oil with a 4/10 bitterness and spiciness doesn't hide in the kitchen. It needs dishes that can stand up to it.

Raw, over salmorejo or gazpacho, or on a slice of rustic bread with ripe tomato and flaky salt. The tomato notes in the oil and the tomato on the plate meet.

With vegetables: grilled artichokes, wild asparagus, roasted eggplant, or tender broad beans. The bitterness of the oil harmonizes with the bitterness of the vegetable. They don't compete; they complement each other.

With baked oily fish (mackerel, sardines, tuna), with grilled red meat, added at the last moment, and with aged sheep's milk cheeses. That black pepper finish holds its own against the fat without disappearing.

And to surprise, a few drops over dark chocolate or over sliced orange with a pinch of salt. The menthol finish does the rest.
