What is EVOO?
It stands for Extra Virgin Olive Oil. It's a term that has been used for many years in professional olive oil production circles but has spread to the general public due to the popularization of healthy lifestyles.
What is the difference between EVOO and Olive Oil?
EVOO is Extra Virgin Olive Oil , that is, pure olive juice, of the highest quality, without any defects and with all its healthy properties intact. Olive oil is a blend of refined oil with a small proportion of EVOO.
How is EVOO made?
The process is the same for all oils. The olives are taken to the mill, ground, blended, and the water is separated from the fat, leaving the clean oil on one side and the remaining oil (water and pomace) on the other.
How do you determine what is EVOO and what isn't?
To determine whether an oil is Extra Virgin, two complementary processes are used: a laboratory analysis and a technical tasting by a certified tasting panel . The tasting process is regulated by law.
What is unfiltered oil?
