Nestled in the Sierra Mágina Natural Park, the Sierra Mágina Protected Designation of Origin (PDO) certifies exceptional extra virgin olive oils (EVOO) produced in a region steeped in centuries of olive-growing tradition. Covering more than 60,000 hectares across fifteen municipalities in Jaén, Sierra Mágina is the largest olive grove protected by a designation of origin in Europe.

The star variety of this PDO is the Picual olive, world-renowned for its high concentration of natural antioxidants and stability, which guarantee fresh, long-lasting oils. As a complement, the Manzanillo variety from Jaén is also used, providing subtleties that enrich the product's sensory profile.

La Denominación de Origen Protegida Sierra Mágina es una figura de calidad reconocida por la UE desde 1999. Garantiza que un aceite procede exclusivamente de olivares inscritos en la zona de Sierra Mágina, en Jaén, y cumple rigurosamente con normas sobre cultivo, fabricación, análisis químico, cata y embalaje

La DO comprende unos 15 municipios de la comarca de Sierra Mágina (Jaén), con aproximadamente 60 000 ha de olivar en altitudes entre 600 y 1 300 m y un valle mixto de secano y regadío

Las variedades autorizadas son Picual (mayoritarias) y Manzanillo de Jaén (como variedad secundaria). Picual aporta intensidad y alta estabilidad, mientras Manzanillo añade aromas suaves y afrutados

El aceite DOP Sierra Mágina tiene un frutado verde vibrante con aromas de hierba fresca, tomatera, hoja de olivo, almendra verde o higuera. Su sabor es ligeramente amargo y picante, reflejo de su riqueza en polifenoles y antioxidantes, lo que también le confiere una excelente estabilidad  

Las aceitunas se recogen de manera mecánica directamente del árbol, se llevan en menos de 48 h a la almazara y se prensan sin demora. Posteriormente, el aceite pasa pruebas químicas y organolépticas (panel de cata) realizadas en laboratorios acreditados por ENAC bajo la supervisión del Consejo Regulador 

El sello garantiza:

  • Origen controlado: todo el aceite se produce y envasa dentro de la comarca.
  • Calidad certificada: análisis químico, cata, ausencia de defectos y residuos.
  • Fiscalización oficial: supervisión del Consejo Regulador y Fundación Certióleo, regulados por ENAC .Adicionalmente, participan en proyectos como “Origen España” (desde abril 2025), asegurando uso correcto del sello y transparencia en los puntos de venta
