Molino & Cata Editorial Policy
Who writes, what sources we use and how we use AI.
Applies to Aprende, product sheets and our social media. Last updated: Nov 1, 2026.
Who writes
Every article includes the name of the person who wrote it and the publication and last updated dates.
- Mercedes Uceda, professional taster: tasting, quality, varieties and production.
- Jerónimo Palacios: purchasing, storage, prices and the market.
Sources
We link to the source of any data that is not our own.
- Regulations: Commission Delegated Regulation (EU) 2022/2104 on the marketing standards for olive oil.
- Sensory and chemical analysis methods of the International Olive Council.
- Published scientific studies, with a link to the original.
- Our own data, such as tastings or sales, with its origin and date.
Health
We only use health claims authorized by the European Union. For olive oil, there is one: “the polyphenols in olive oil contribute to the protection of blood lipids from oxidative damage” (Regulation (EU) 432/2012), valid only for oils with at least 5 mg of hydroxytyrosol and its derivatives per 20 g.
We do not provide medical advice.
Artificial intelligence
No text is published without being written or reviewed and signed by a member of the team. Tastings, data and opinions are our own.
Commercial relationship
We sell the oils we write about. When an article links to a product, it is from our store.
Some articles and videos feature producers with whom we have a commercial agreement. We indicate this in the piece itself.
Errors and corrections
If you find an error, write to us at hello@molinoycata.com. We will correct it and add a note at the end of the article stating what changed and when.
