    Why we chose it

Pedro called us to give them a hand with the bottling of the early oils. What Oro de Baeza bottles is a blend created by Mercedes: she made this fantastic Picual and set aside the best to bottle in Lírico, its flagship.

    Pairing

    How to enjoy it

An early Picual with fruitiness, bitterness, and spiciness in equal measure. Tomato, freshly cut grass, and olive leaf. It is oil for dishes with character.

First, tomato: salmorejo, gazpacho, bread with tomato, or a real tomato salad with flaky salt. It is its natural partner.

Raw over salads with a base and legumes: potato, quinoa, chickpeas, or lentils. The bitterness lifts dishes that taste flat on the palate.

With grilled red meat, added at the end, with oily fish (tuna, mackerel, sardines), and with aged sheep’s milk cheeses. It stands up to the fat and cuts through it.

And if you dare, with dark chocolate or an orange with salt. The spicy finish suits cocoa better than you might think.

    Oleandaluza

    The mill

    Oleandaluza
