Tasting notes
This Coratina stands out for its intense aroma of green almond and bitter almond, with undertones of green grass and green apple. On the palate it is an explosion of power where bitter and pungent are clearly present, yet balanced, leaving the mouth with a mentholated sensation. Aftertaste of green almond and artichoke.
Pairing
Essential on salads with mild bases and on desserts with chopped fruit, intense red meats, spiced dishes, traditional stews and grilled vegetables, adding depth and character.
Coratina is Italian — from Corato, in Puglia — and is probably the variety with the most polyphenols in the world. Finding it cultivated in Jaen is already a rarity, but what fascinates me about this oil is the explosion of power on the palate: bitter and pungent clearly present yet balanced, with that mentholated sensation at the end that is the signature of the variety. The aroma of green almond and bitter almond is a hallmark I can recognise blindfolded. One of the most intense oils in our catalogue.

Coratina in Jaen. Coratina is Italian — from Corato, in Puglia — and is probably the variety with the most polyphenols in the world. In Italy it covers 70,000 hectares and is the undisputed queen of the south. Finding it cultivated and bottled in Jaen is a rarity that deserves attention.
Vizconde de Almansa is born from the union of Oleicola Jaen with the Almansa family, owners of olive groves in Arjona and Espeluy — historic lands of the Jaen olive country. The Coratina trees have adapted to the soil and climate of the Jaen countryside, and the result has its own personality: it is not exactly Italian, not exactly from Jaen. It is something new. Coratina can exceed 700 mg/kg of polyphenols — for perspective, a conventional oil rarely surpasses 150.
This oil is pungent. Quite. And that pungency is a good sign: it comes from the polyphenols, specifically oleocanthal. European regulations allow health claims for oils with more than 250 mg/kg of polyphenols — Coratina more than doubles that. It is one of the oils with the most documented health benefits you can buy.
An Italian Coratina grown in Jaen. When they introduced it to us, we could not believe it. We tasted it and it set our mouths on fire — in the best way. It is the oil we bring out for the brave customers who say "I want the most intense one you have." More than 700 mg/kg of polyphenols speak for themselves.

An olive variety originating from Corato, in the Puglia region of southern Italy. It is the variety with the highest polyphenol content in the world, regularly exceeding 500-700 mg/kg. In Italy it covers more than 70,000 hectares.
Because of its extremely high content of oleocanthal, an anti-inflammatory polyphenol that activates the pungency receptors in the throat. The more it stings, the more oleocanthal it contains. It is a virtue, not a flaw.
Oleicola Jaen and the Almansa family planted it in their groves in Arjona and Espeluy, in the Jaen countryside. The variety has adapted to the local terroir, yielding a profile that retains the Italian potency but with its own distinctive nuances.
Grilled red meats, hearty legumes, bitter vegetables (broccoli, turnip greens, endive), aged cheeses, bread with tomato. It needs companions with character. Do not pair it with a delicate white fish.
It is one of the oils with the most documented health benefits.
