The Uceda family has spent three generations among olive trees. Marino, the father, devoted his life to olive-oil science: IFAPA research, technical consulting for the FAO and reference publications on olive oil.
Mercedes, the daughter, grew up among test tubes and mills. She studied Biology at the University of Granada and trained as a professional taster at the University of Jaén.
One day, Mercedes and Jerónimo —her partner, who came from technology and digital transformation— asked themselves a simple question: why is it so hard to buy good olive oil? In the supermarket everything looks alike; in the mills there are gems that never leave the province; and online you never quite know what you are buying.
An oleoteca was missing. In 2024 they opened theirs in the centre of Granada, on C. Paz. And Marino, officially retired, still comes in to advise. He says it is for the oil; they know it is for the granddaughters.

to buy good olive oil?
An oil's colour deceives. A pretty golden hue says nothing about flavour, and a great extra virgin can be deep green or almost pale. That is why the International Olive Council defined a cobalt-blue tasting glass: it hides the colour so that the nose and the palate decide.
Each sample is smelled and tasted with no label in sight, and scored on three attributes. Only when it convinces does it reach the shelf.
