The Singular collection by Molino & Cata brings together limited-production extra virgin olive oils, selected from the best harvests of each campaign. These are oils that stand out in the leading international guides (Evooleum, Flos Olei, AOVE Awards) and offer complex and memorable sensory profiles.

Here you will find varieties such as mountain Picual, Frantoio, Koroneiki and signature blends. Each oil has its own character: from intense fruity notes of green tomato and fresh grass to more delicate oils with hints of almond, banana and artichoke.

Mercedes Uceda selects each oil for its uniqueness within the campaign. We do not seek volume — we seek oils that surprise. And we offer them at the same price as the mill, with no middlemen. That is why quantities are limited and some oils are only available for a few weeks a year.
