An oleoteca is a space dedicated to extra virgin olive oil. There are tasting glasses, oils open to try, and someone to tell you where each bottle comes from, who made it, and why it's on our shelf and not another.

What sets us apart: Mercedes Uceda, professional taster, personally visits the mills, tastes every harvest and selects only the oils that meet her standard. No intermediaries — straight from the mill to your table.

She was Quality Director at IADA Ingenieros, whose clients have received international recognitions published by IADA, and is a head-panel taster at Evooleum, Ovibeja, the Los Angeles IOOC and the Alcuza Awards (DO Sierra Mágina).

Ninety minutes tasting 5 to 8 extra virgin olive oils with a professional tasting glass, in our oleoteca in central Granada. Varieties like picual from Jaén, arbequina, hojiblanca and hard-to-find minority oils.

You learn to taste with method: see, warm, smell, taste; to identify the positive attributes of EVOO (fruitiness, bitterness, pungency) and to choose the right oil for each dish. For groups of 2 to 15. In Spanish or English on request.

Who welcomes you

Mercedes Uceda — professional taster.

Biologist from the University of Granada and tasting expert from the University of Jaén. Head-panel taster at Evooleum, Ovibeja, the Los Angeles IOOC and the Alcuza Awards. She was Quality Director at IADA Ingenieros, whose clients have received international recognitions, and she collaborates in tasting education with the UJA and UNIA.

Her father, Dr. Marino Uceda — Ph.D. Agricultural Engineer, former IFAPA, FAO consultant and olive-oil quality specialist — is the scientific advisor. And on the digital side, Jerónimo Palacios: business, e-commerce and logistics.

Uncover. Three short inhalations. Identify the fruitiness family.

Draw air in from the side. Assess pungency and bitterness.

What are the oleoteca's opening hours?
Monday to Friday 11:30–19:30; Saturdays 11:00–14:00. Closed on Sundays.
Do I need to book to visit the shop?
No. The shop is open access during business hours and we advise you with no obligation. Only guided tastings require a reservation.
How long does an oil tasting last?
The Oil Tasting lasts 90 minutes. The masterclass 3 hours and the pairing about 2 hours.

Do you run tastings in English or other languages?
