Cobalt tasting glass · International Olive Council
The official tasting glass is cobalt on purpose: it hides the colour of the oil so that your nose and your palate decide, not your eyes. It's the same method used to judge the international awards — and the one you practise from the very first minute here.
Andalusia produces around 40% of the planet's extra virgin olive oil. Jaén, 92 km away, is the largest olive-growing province in existence. Córdoba, Seville, Málaga — all less than two hours away.
Granada is home to two important Designations of Origin: Poniente de Granada and Montes de Granada. And yet visitors struggle to find a real tasting experience in the city. That's why we opened here.
C. Paz, 12, next to Plaza de la Trinidad, a quiet pedestrian area. 3 minutes from the Cathedral and Royal Chapel, 5 from Bib-Rambla, 8 from Plaza Nueva and the Albaicín, and a short walk from the Paseo de los Tristes.

Mercedes has been a head-panel taster at competitions such as Evooleum, Ovibeja, the Los Angeles IOOC and the Alcuza Awards. Only oils that pass her tasting make the list.
Each with its character, its region, its story.
Intense. Tomato leaf. Marked bitterness and pungency. A stable oil.
Green almond. Elegant pungency. Balance between sweet and strong.
Mild. Apple, sweetness. The gateway to tasting for many.
Ripe fruit. A hint of avocado. Long finish on the palate.
Uncommon and hard to find. A discovery for the curious palate.
A local Granada variety. An oil from here, the kind that rarely leaves the province.
You'll practise from the very first minute. You don't need to know anything about oil before you come.
Glass covered, in the hand, around 28°C. Slow circular movements.
Uncover. Three short inhalations. Identify the fruitiness family.
A small sip. Spread the oil across your whole mouth and palate.
Draw air in from the side. Assess pungency and bitterness.
Exhale through the nose. This is where the real complexity appears.
In the Oil Tasting you practise from the first minute. In the masterclass we go deeper with the full sensory wheel.
