What it includes

One day late, one grade lower

Bringing the harvest forward or pushing it back changes the oil yield, the sensory profile and the selling price. Without technical judgement you lose green fruit — and with it, the polyphenols and volatiles that set a singular EVOO apart from a merely correct one.

01 When should we start?
Before veraison. The sooner we sample, the more room there is to plan the harvest and the order of entry.
02 Do you work by variety?
Yes. Picual, Hojiblanca, Arbequina and Cornicabra have different windows; each is assessed separately.
03 Do we need our own laboratory?
No. We combine field measurement with expert tasting; the laboratory is used where it adds value.
