Tasting notes
This extra virgin olive oil presents an intense green olive fruitiness on the nose. It is very complex, with aromas reminiscent of fresh-cut grass, leaf, aromatic herbs and vegetal notes such as tomato and artichoke. It has notes of fruits like apple, banana, green almond and other nuts. There is a slight hint of spice. On the palate we find a clean, fragrant and persistent oil in which the aromas are reaffirmed. It surprises with a smooth, sweet entry, followed by bitter and pungent notes that are well balanced and moderate in intensity.
Pairing
This oil wonderfully enhances fresh salads with Mediterranean ingredients, homemade salmorejo, sauteed vegetables and white meats on the grill, bringing a genuine touch that turns any simple dish into a gourmet delight.
Torres sits at 880 metres altitude in Sierra Magina, and this Picual tells the whole story. The aromatic complexity is extraordinary: fresh-cut grass, leaf, aromatic herbs, tomato, artichoke, apple, banana, green almond, spices. On the palate it surprises with a smooth, sweet entry that gives way to well-balanced bitter and pungent notes. It is the oil of 634 small-scale farmers from a cooperative founded in 1971, and that collective story comes through in every drop.
Know every detail

Torres sits at 880 metres above sea level, in Sierra Magina. And those metres matter: the altitude slows olive ripening, polyphenols concentrate further and the oil gains complexity. The Cooperativa Santa Isabel was founded in 1971 by a group of farmers who previously managed the village hydroelectric plant. Today it is made up of 634 small-scale farmers who deliver their olives to the cooperative.
The oil is made from early-harvest Picual, picked when the olive is still green. At 880 metres the cold slows ripening, the olive matures more slowly, accumulates more polyphenols and develops a complexity that the same tree at 300 metres would not achieve. Immediate milling after harvest, cold extraction.
Senorio de Camarasa won Jaen Seleccion 2023 with its "Recien Hecho" oil and has been runner-up for the Lechuza Prize of the DOP Sierra Magina on two occasions. It belongs to the Protected Designation of Origin Sierra Magina. It is an example of what happens when a large cooperative does things right.

A Picual at 880 metres altitude, from a cooperative of 634 farmers, with a profile that starts smooth and deceives — it seems gentle until the bitter and pungent notes appear. At 880 metres, the cold slows down olive ripening. The fruit matures more slowly, accumulates more polyphenols and develops more complex aromas. The same tree at 300 metres would yield a less interesting oil.
