Tasting notes
It presents green notes reminiscent of leafy greens and lamb's lettuce, with a clear touch of ripe tomato. Green almond and green banana notes appear. On the palate it enters sweet, and instantly bitterness emerges alongside a touch of astringency that recalls green nuts. The peppery finish is a clear protagonist, reminiscent of chili pepper, yet beautifully balanced and elegant. The aftertaste is of tomato and green nuts.
Pairing
For finishing cold soups such as a vichyssoise or a cream of avocado and green apple. Pairs with grilled meats and fish, adding a vegetal touch and an intriguing peppery note.
Parqueoliva Serie Oro is a coupage of two varieties with character, Hojiblanca and Picudo, protected by the PDO Priego de Cordoba, and is beautifully assembled. The notes of lamb's lettuce and leafy greens with ripe tomato in the background create a profile I often use in tastings to show that a well-crafted coupage can be as expressive as -- or more so than -- a single-variety oil.

Parqueoliva Serie Oro is the flagship coupage of Almazaras de la Subbetica, the cooperative in Carcabuey that also produces Rincon de la Subbetica. Hojiblanca and Picudo, both protected by the PDO Priego de Cordoba -- one of the most demanding designations of origin in Spain. Only olives from Carcabuey, Priego de Cordoba, Fuente Tojar and Almedinilla are admitted.
A coupage is a flavour design: combining varieties to achieve something that none could deliver alone. Here the Hojiblanca provides structure and character, while the Picuda adds elegant sweetness. Olive trees in a continental Mediterranean climate, harvested between October and November. The assemblage has been refined for over two decades.

It is a blend of two or more olive varieties. The varieties can be processed separately and the oils assembled afterwards. Or the different olive varieties can be harvested together in what is known as a natural coupage.
Parqueoliva Serie Oro is a coupage (variety blend), more balanced and versatile. Rincon de la Subbetica is an organic Hojiblanca single-variety oil, more intense and complex. Both come from the same cooperative and both hold PDO Priego de Cordoba, but their flavour profiles are very different.
