Tasting notes
On the nose, a medium fruity aroma reminiscent of green apple and freshly cut grass, finishing with lettuce stalk notes. On the palate, a smooth entry with barely perceptible bitterness and slightly more peppery notes. Aftertaste of banana and green almond. A medium-mild, well-balanced oil combining three olive varieties that complement each other perfectly, each contributing exceptional qualities to the whole. One of the best oils in the world year after year.
Pairing
Ideal for varied dishes such as Iberian charcuterie, aged cheeses, cold soups, gourmet salads, grilled white meats and roasted vegetables, enhancing each flavour in a balanced and elegant way.
Less than 180 millimetres of rain a year produce oils that exist nowhere else. This coupage is an exercise in balance where each variety — Picual, Hojiblanca, Lechín, Arbequina — adds a layer without covering the others. The smooth entry, the banana and green almond aftertaste, that harmony that only the water stress of the Tabernas desert can give. Year after year it ranks among the best in the world, and year after year it confirms that extreme conditions produce extraordinary oils.

Less than 180 mm of rainfall a year. Over 3,000 hours of sunshine. It sounds hostile, but in the Tabernas desert these are the conditions that produce one of the best organic olive oils in the world.
We discovered it at a tasting in Almería and it seemed impossible — from the Tabernas desert? We visited the estate. We saw the olive grove surviving on 180 mm of rainfall a year. We tasted the coupage at the mill and knew we had to bring it to Granada. It is the most singular organic oil we carry.

Four: Picual, Hojiblanca, Lechín and Arbequina. All grown on the El Vicario estate in the Tabernas desert. The proportion varies slightly each harvest depending on ripeness, but the flavour profile stays consistent because the four varieties complement each other.
It means it holds official EU certification (in this case issued by CAAE). No synthetic pesticides, no chemical herbicides, no artificial fertilisers. The estate is inspected every year. It is not a marketing label — it is a legal framework with real audits.
Because farming without chemicals requires more work. Pests are controlled with traps and natural predators, not a bottle of insecticide. Weeds are removed mechanically. Yield per hectare is lower. That is reflected in the price — but also in what the oil does not contain.
It is the most versatile oil in the range. It works drizzled over salads, toast and vegetables, but also holds up well in a sauté or light fry without losing its character. An everyday oil that actually tastes of something.
Over 250 international awards since 2003, including consecutive Gold medals at the NYIOOC (New York), 99/100 in Flos Olei, and recognition as Spain's most sustainable olive grove in 2023.
Keep it in the dark, at a stable temperature (15–20 °C), away from heat sources. Never next to the stove. Once opened, use it within 4–6 weeks. Organic olive oil contains no added preservatives — its stability depends on natural polyphenols.
