Everything behind the numbers — the varietal, the estate, the milling, and how to taste it.
This coupage combines the three varieties cultivated on the estate: Picual for structure and stability, Arbequina for smoothness, and Benizar, which lends the thyme note. They make it from their own olives, not by purchasing oils from different sources. Same soil, same climate, optimal harvest timing. From tree to mill in under 3 hours. The difference between this coupage and an industrial blend is the same as between a home-cooked stew and a ready meal. EU organic certification since 2019.
