Tasting notes
A blend with green and ripe touches, featuring green grass and fruit puree, with notes of red tomato and green banana. On the palate it enters sweet, followed by astringency and finally a gentle peppery touch. The aftertaste recalls roasted almond and thyme.
Pairing
This blend adds notes of thyme, making it ideal for finishing stews and spoon dishes, as well as vegetables, meats, and fish cooked over coals. Also pairs well with aged cheeses and pizzas.
This blend combines the Picual and Arbequina from the same organic estate in Hellin, and each variety contributes without overpowering the other. The transition from sweet to astringent and then to gentle pungency is very natural, with that aftertaste of almond and thyme that reveals the limestone soil and the climate of the Sierra de Segura. A blend that proves you do not need to mix many varieties to achieve complexity.
Know every detail

Pago de Penarrubia is an estate belonging to two families of agricultural engineers in Hellin, Albacete, at the foot of the Sierra de Segura. They bought it in 2014, converted it to organic in 2019, and built their own mill on the property. They keep geese to control weeds, produce their own organic compost, and grow truffles among the olive trees.
This blend combines the two varieties they cultivate on the estate: Picual for structure and stability, Arbequina for smoothness. It is made with their own olives, not by purchasing oils from different origins. Same soil, same climate, same harvest day. From tree to mill in less than 3 hours. The difference between this blend and an industrial one is the same as between a home-cooked meal and a ready-made dish. EU organic certification since 2019.
Penarrubia's Picual has already won the third Mario Solinas Prize 2025 from the International Olive Council. The blend is made from that same raw material — the same olive trees on limestone soils of the Sierra de Segura, the same mill integrated into the estate — blended with the Arbequina to create an oil that neither variety would give on its own.
We selected it because it is a blend where both varieties come from the same estate, the same day, the same soil. That coherence shows in the oil. It is the organic blend we recommend to anyone who wants a well-rounded oil for everyday use without compromising on principles.

Picual y Arbequina, las dos variedades que cultivan en su finca de Hellin. La proporcion exacta puede variar ligeramente entre campanas, pero siempre es un equilibrio entre la intensidad del Picual y la suavidad de la Arbequina.
En que las aceitunas vienen de la misma finca, se recogen el mismo dia y se procesan en la misma almazara. Un coupage industrial mezcla aceites de distintos origenes, a veces de distintos paises. Aqui todo viene del mismo suelo, el mismo clima y la misma mano.
Ninguno es "mejor" por definicion. Una cooperativa como Almazaras de la Subbetica puede producir el aceite mas premiado del mundo. Una finca como Penarrubia puede ofrecer trazabilidad total. Lo que importa es el compromiso con la calidad, no el modelo de negocio.
Si. Toda la produccion de Pago de Penarrubia tiene certificacion ecologica de la UE desde 2019.
Si. El coupage tiene una versatilidad que lo hace apto para cocina: salteados, guisos, salsas. Pero en crudo es donde mejor se aprecian sus matices.
