Character Half and Fruity Green

Tasting notes

This extra virgin olive oil has a noseintense fruitiness of green olives.

It is very complex, with aromas reminiscent of freshly cut grass, leaves, aromatic herbs, and vegetal aromas, such as tomato and artichoke.

It has notes of fruits such asapple, banana, green almond and other nuts. It has a light spicy flavor.

On the palate, we find a clean, fragrant, and persistent oil in which its aromas are reaffirmed. It surprises with an entrancesoft and sweet, then appearing the bitter and spicy, well balanced and not very intense.

Pairing

This oil wonderfully enhances fresh salads with Mediterranean ingredients, homemade salmorejo, sautéed vegetables, and grilled white meats, providing a genuine touch that turns any simple dish into a gourmet delight.

SCA Santa Isabel de Torres

The Santa Isabel de Torres Cooperative, founded in 1971 in Torres, Jaén, is a society of 634 small farmers dedicated to the production of high-quality extra virgin olive oil. Located in the heart of the Sierra Mágina Natural Park, at an altitude of 880 meters, the cooperative cultivates century-old olive trees in a traditional mountain olive grove.

Its flagship product is Señorío de Camarasa, a Picual EVOO with the Sierra Mágina Designation of Origin, recognized for its quality and unique flavor. The cooperative combines tradition and innovation, offering conventional and organic oils, and has received several awards, including the Jaén Selección 2023.

With more than 50 years of history, Santa Isabel de Torres has established itself as a benchmark in the production of premium quality extra virgin olive oil, maintaining a strong commitment to sustainability and the preservation of the rural environment.

The variety

Picual

The Picual olive is the most common variety to produce Extra Virgin Olive Oil in the province of Jaén. It represents 80% of the world's olive plantations and is an agricultural treasure that accounts for 20% of the world's olive oil.

This variety, native to the province of Jaén, not only defines the seas of olive trees seen after crossing Despeñaperros, but is also key to the gastronomy, nutrition, and health of the Mediterranean diet.

From Jaén to the plate

Its characteristic teardrop shape and a small peak at its base give this variety of olive its name.

The Picual variety is harvested to obtain the so-called Premium Oils between October and mid-November, from then until December They obtain the Extra Virgins Its secret lies in its unique combination of flavor and health: oils with notes of summer gardens: tomato plant, fig leaf, olive leaf, freshly cut grass, and green pepper.

Its distinctive black pepper aroma hints at the potent character of its flavor. EVOO has a distinct bitterness and spiciness, thanks to the polyphenols it contains, which give it great stability and its healthy properties.

Built-in versatility

It is one of the most versatile varieties we can find. A splash of it on a good vanilla ice cream reveals nuances that other oils hide.In the kitchen, its use can vary from finishing red meats to salads.or more traditionally, toast for breakfast.
