Tasting notes
An intensely green-fruity extra virgin, made from hand-selected olives harvested in October at the optimal moment of ripeness and milled immediately upon arrival at the mill, resulting in exceptional organoleptic qualities. A voluptuous nose reveals tomato vine, artichoke, green almond, fig tree, green apple, green banana, aromatic herbs and fresh grass. Bold presence on the palate -- bitterness is medium-high and the peppery sensation builds progressively across a broad spectrum, yet both harmonise with the fruitiness.
Pairing
Especially suited to enhancing the flavour of white fish such as sea bass or cod, whether baked or grilled. It also pairs beautifully with fresh and semi-aged cheeses, bringing out their lactic nuances. Ideal for dressing Mediterranean salads with tomato, cucumber and black olives. Its use in pasta dishes with light sauces based on vegetables or seafood adds an extra dimension of flavour.
Jabalcuz proves that a cooperative can produce competition-grade oils. This Gran Seleccion has a voluptuous nose where I recognise tomato vine, artichoke, green almond, fig tree -- all at once, all beautifully integrated. On the palate the presence is bold, with that medium-high bitterness and progressive pepperiness that harmonise with the fruitiness. Selected olives, harvested in October, milled immediately. That simple, that difficult.

Jabalcuz is not a boutique mill. It is a cooperative born in 2004 from the merger of two historic cooperatives in Los Villares, Jaen: San Juan Bautista and Nuestra Senora del Rosario. This season alone it has produced 3.6 million kilos of oil, of which 2.5 million are extra virgin and virgin. Those numbers matter: they prove that scale and quality can go hand in hand when a cooperative does things right.
Early-harvest Picual, olives picked in October and milled immediately. The cooperative sits in Los Villares, at the foot of the Sierra de la Pandera, at an altitude that makes a real difference in polyphenol concentration. The Gran Seleccion is the finest selection from that harvest -- the batches the technical team sets aside as exceptional.
Three consecutive Jaen Seleccion awards -- 2024, 2025 and 2026 -- and a Mario Solinas 2025 from the International Olive Council in the Medium Green category. The Mario Solinas is the world's benchmark competition for olive oil. That a village cooperative wins it says everything about what can be achieved when rigour stands behind scale.
Three consecutive Jaen Seleccion awards and a Mario Solinas. When a cooperative achieves those numbers, you have to pay attention. We tasted it in Los Villares and drove back to Granada with a full case. It is the cooperative Picual that proves quality and scale are not incompatible.

An agricultural cooperative is an association of farmers who share a mill. Each member contributes their olives; the cooperative processes and markets the oil. In Jaen, 75% of olive oil comes from cooperatives. Jabalcuz (SCA Sierra de la Pandera) proves that cooperative and top quality are compatible.
Mario Solinas Award 2025 from the International Olive Council (Medium Green category) — the world reference competition. Three consecutive Jaen Seleccion awards (2024, 2025, 2026). These prizes are awarded in blind tastings: the panel does not know who produced the oil.

Extra virgin olive oil is a fresh product. Its quality depends on proper storage and consuming it within its optimal date. If an online shop does not tell you which lot it will ship or when it expires, you have no way of knowing if what you receive is from this harvest or two years ago.
Be wary of shops that do not publish this information. We show it because we believe you have the right to know exactly what you are buying.
It depends on your taste. If you enjoy oils with character, it is perfect for daily use. If you prefer something milder, the Cosecha Temprana (Early Harvest) is more approachable.
