Oiltopia is the commercial brand of Aceites Estrella del Guadalquivir, a mill that has been producing since 2009 in Villa del Rio, Cordoba, on facilities with more than 50 years of history. They produce oil from their own groves with total chain control, from the field to the bottle.
This Picual benefits from that vertical integration. Controlling the entire chain — from the grove to bottling — eliminates the defects that appear when the olive passes through too many hands. The result is a clean, well-executed Picual, with everything you expect from the variety and something you do not always find: a total absence of defects.
Picual is the variety with the highest oleic acid content on the market (75-82%) and the highest polyphenol concentration of all commercial varieties. In practical terms, that means longer shelf life and more bioactive compounds per spoonful than any other variety.

Porque tiene la mayor concentración de polifenoles de todas las variedades comerciales (300-600 mg/kg en cosecha temprana). Los polifenoles son antioxidantes que se manifiestan como amargor en la lengua y picante en la garganta. No son defectos: son señales de calidad y frescura.
Es el más estable bajo calor gracias a su contenido en ácido oleico (75-82 %, el más alto de todas las variedades). Se degrada menos que una Arbequina o Hojiblanca al freír. Así que sí, para cocinar, Picual es la referencia.

En el origen geográfico. Este Picual viene de la cuenca del Guadalquivir en Córdoba, no de la sierra de Jaén. El terroir es diferente, pero la variedad sigue siendo Picual con su perfil verde intenso, amargo y picante característico.
El Picual es la variedad con mayor vida útil. Sin abrir y bien almacenado (oscuridad, temperatura estable entre 14-20 °C), puede mantenerse 18-24 meses. Una vez abierto, consúmelo en 6-8 semanas.
