Tasting notes
A nose reminiscent of freshly cut grass, fruit puree, biscuits and cinnamon. In the background, notes of green almond and green apple. On the palate it is sweet, with a peppery point at the finish. The aftertaste is of red tomato and banana. A complex and elegant extra virgin olive oil.
Pairing
Ideal for making sauces and mayonnaise, contributing just the right aromas and its smoothness. Also well suited to baking. As an accompaniment to yoghurt or over freshly cut fruit, giving desserts a distinctive touch.
O-MED's Arbequina has an elegance that is unusual for this variety. There are aromatic layers that appear with patience -- the freshly cut grass first, then that fruit puree with cinnamon that is so difficult to achieve in an Arbequina. When I bring it to my nose during tastings, someone always says it does not seem like an Arbequina, and that is exactly the point.
Know every detail

Same Garcia family, same mill in Acula, same obsession with detail. Juan de Dios bought the mill in 2004, and his children Paula and Juande -- both pharmacists -- left their careers to devote themselves to olive oil. They come from Cambil, Jaen. The difference from the Picual is the variety: where the Picual is intense and green, O-MED's Arbequina is complex and elegant without losing personality.
Same October harvest, same cold extraction within hours. The entire harvest lasts 3 to 4 days at most. From the moment the olive leaves the tree to the moment the oil is in a stainless-steel tank, hours pass -- not days. It is the same obsessive protocol they apply to the Picual, adapted to a variety that demands a different kind of precision.
The German magazine Der Feinschmecker ranked it number 2 in the world, and it holds gold medals from Olive Japan and the Zurich International Prize. This is not a generic supermarket Arbequina: it is an Arbequina bearing the signature of a mill that has spent two decades refining every detail of the process. Today it is exported to over 30 countries alongside the Picual.
Mercedes tasted it in a blind tasting and identified it instantly: "This is not a normal Arbequina." She was right. We ordered it that same week and it has been with us ever since. It is the Arbequina we pour when someone wants something smooth but with a story behind it.

Extra virgin olive oil is a fresh product. Its quality depends on proper storage and consuming it within its optimal date. If an online shop does not tell you which lot it will ship or when it expires, you have no way of knowing if what you receive is from this harvest or two years ago.
