Everything behind the numbers — the varietal, the estate, the milling, and how to taste it.

The Hojiblanca from Oro del Desierto comes from the El Vicario estate, in the Tabernas desert, Almeria. The Alonso family has been cultivating olive trees for three generations in the driest climate in Europe: less than 180 mm of annual rainfall and more than 3,000 hours of sunshine. Hojiblanca under early harvest and extreme water stress produces a concentration of polyphenols — particularly oleocanthal, a natural anti-inflammatory — well above what is typical for this variety.

Organic certification since 1999. 130 hectares, 36,000 olive trees, no pesticides, no herbicides, no shortcuts. The harvest is early, with the olive still green, and milling takes place on the same day. EU certification issued by CAAE with annual audits.

Oro del Desierto has accumulated more than 250 international awards and 99/100 in the Flos Olei guide. The grove was recognised as the most sustainable in Spain in 2023. The Hojiblanca is the variety with the most character in the range: five single-varieties and one blend, all from the same desert terroir, all organic.

La Hojiblanca del desierto es pura potencia contenida. Nariz verde intensa con bellota, tomate verde y pinceladas de pimienta blanca — y en boca un carácter que se presenta desde el primer momento con ese picante tipo guindilla clásico de la variedad. Es una Hojiblanca que nos recuerda lo que esta variedad puede dar cuando crece en condiciones extremas y se cosecha en el momento justo.

Why is the Hojiblanca so pungent?
Because it's a variety rich in oleocanthal, a phenolic compound with anti-inflammatory properties. The earlier the harvest, the more oleocanthal it contains. The Hojiblanca from the Tabernas desert is harvested very early and under water stress conditions, which maximises that concentration. The pungency in the throat is a sign of quality, not a defect.
Is it suitable for people who don't like intense oil?
Honestly, it's not the best starting point. If you prefer mild oils, start with the Arbequina or Lechin from Oro del Desierto. The Hojiblanca is for those seeking character, complexity and an oil that makes itself known on the plate.
Which dishes does it pair with?
With everything that has its own flavour: grilled red meats, legumes, cured cheeses, hearty stews, grilled vegetables. It's also spectacular over a gazpacho or salmorejo. Don't use it on delicate white fish -- it would overwhelm it.
What is the difference between table Hojiblanca and Hojiblanca for oil?
The Hojiblanca olive is used for both. As a table olive it's dressed and is mild and fleshy. As an early harvest oil it develops a completely different profile: intense, bitter, pungent. Two sides of the same variety.
How many polyphenols does it have?
Hojiblanca has a medium-high polyphenol content, lower than Picual but higher than Arbequina. In early harvest from the desert, levels concentrate especially. Exact data varies each campaign -- they're analysed in the laboratory after each harvest.
Is this oil organic?
Yes. EU certification issued by CAAE, like the entire Oro del Desierto range. Organic production without synthetic pesticides or herbicides since 1999 at the El Vicario estate, Tabernas.
