Tasting notes

A green leaf aroma with notes of rocket and green banana, and touches of green almond at the end. On the palate it enters sweet, followed by noticeable astringency, and finally a peppery touch. The aftertaste recalls green nuts and green tomato.

Pairing

Ideal for toast with Iberian cured meats, smoked products, and salted fish. Also for finishing cold or warm creams. For making gazpacho, salmorejo, or pipirrana, or for drizzling over them as a finish.

This Picual comes from an estate where they raise geese to control weeds and produce their own compost. An estate where time stands still and a passion for EVOO is born. It is a Picual that surprises, with contained bitterness and peppery notes, from Albacete -- not a typical territory for this variety, which gives it a character all its own.

They bought an estate in Hellin, Albacete, at the foot of the Sierra de Segura, converted it to organic in 2019, and built their own mill on the property. From tree to mill in less than 3 hours.</p> <p>Organic here is not just a label: they keep geese to control weeds, produce their own organic compost, and grow truffles among the olive trees. It is an estate where everything is designed for the ecosystem to function without chemicals. EU organic certification. Cold extraction, separating varieties and cultivation zones. Each batch is traceable to the individual plot.</p> <p>Third Mario Solinas Prize 2025 from the International Olive Council, Green Light category. Gold at Ecotrama and NYIOOC. From tree to mill in 3 hours -- why does that matter?

Because the olive begins to deteriorate from the moment it is picked. The faster you reach the mill, the less oxidation, the more aromas, and the better the quality. Penarrubia has its own mill on the estate, so they do not depend on anyone.

How is this Picual different from other Picuales?

Its geographic location gives it a delicacy that is not typical in Picual. The Picuales from Jaen tend to be more intense in aromas, peppery finish and bitterness.
