Tasting notes
A green leaf aroma with notes of rocket and green banana, and touches of green almond at the end. On the palate it enters sweet, followed by noticeable astringency, and finally a peppery touch. The aftertaste recalls green nuts and green tomato.
Pairing
Ideal for toast with Iberian cured meats, smoked products, and salted fish. Also for finishing cold or warm creams. For making gazpacho, salmorejo, or pipirrana, or for drizzling over them as a finish.
This Picual comes from an estate where they keep geese to control weeds and produce their own compost. When I taste it, that rocket and green banana on the nose tell me this is a grove that is truly healthy. The contained bitterness and the pungency at the end are those of a well-made organic Picual — from Albacete, which is not typical territory for this variety, giving it a character of its own.

Pago de Penarrubia was born in 2014 when two families of agricultural engineers with five generations in the olive business decided to do things differently. They bought an estate in Hellin, Albacete, at the foot of the Sierra de Segura, converted it to organic in 2019, and built their own mill on the property. From tree to mill in less than 3 hours.
Organic here is not just a label: they keep geese to control weeds, produce their own organic compost, and grow truffles among the olive trees. It is an estate where everything is designed for the ecosystem to function without chemicals. EU organic certification. Cold extraction, separating varieties and cultivation zones. Each batch is traceable to the individual plot.
Third Mario Solinas Prize 2025 from the International Olive Council, Green Light category. Gold at Ecotrama and NYIOOC. Listed in the Flos Olei guide and the World's Best Olive Oils. An organic altitude Picual that is beginning to compete with the major estates in the sector.
We visited the estate and saw the geese among the olive trees, the truffles, the homemade compost. It is not a sales pitch — it is an estate where everything works as an ecosystem. The third Mario Solinas Prize 2025 confirmed what Mercedes had been saying after tasting it: 'This organic Picual has something special.'

De Hellin, Albacete, al pie de la Sierra de Segura. No es Jaen, no es Cordoba — es la meseta sur, un territorio poco conocido para aceite de oliva pero con unas condiciones excepcionales: suelos calizos, altitud, clima continental extremo.
Si. Certificacion ecologica de la UE desde 2019. Pero aqui "ecologico" va mas alla de no usar quimicos: crian ocas para controlar las hierbas, producen su propio abono organico y cultivan trufas entre los olivos. Es un ecosistema disenado, no solo una finca sin pesticidas.
Es el premio de calidad del Consejo Oleicola Internacional (COI), el maximo organismo mundial del aceite de oliva. Pago Penarrubia Picual recibio el tercer premio en la edicion 2025, categoria Verde Ligero. Es uno de los reconocimientos mas prestigiosos que existen.
Porque la aceituna empieza a deteriorarse desde que se recoge. Cuanto mas rapido llegas al molino, menos oxidacion, mas aromas y mejor calidad. Muchas almazaras reciben aceitunas que llevan 24-48 horas esperando. Penarrubia tiene su propia almazara dentro de la finca, asi que no dependen de nadie.
El terroir de la Sierra de Segura le da un punto de delicadeza que no es habitual en Picual. Los Picuales de Jaen tienden a ser muy intensos, con mucho amargo y picante. Este tiene caracter, pero con un equilibrio mas fino. Es un Picual de montana.
