Tasting notes
Green notes reminiscent of broad-leaf greens and lamb's lettuce, with ripe hints of red tomato in the background. Lettuce stalk notes emerge. On the palate it enters sweet, then bitterness and a touch of astringency appear, recalling green nuts. A light peppery kick arrives at the finish. The aftertaste is of red tomato and green nuts.
Pairing
Perfect for finishing cold dishes such as vichyssoise or a green apple and avocado cream. Pairs beautifully with grilled meats and fish, adding a vegetal touch without masking their flavour.
Parqueoliva Serie Oro is a Hojiblanca-Picuda blend under the DOP Priego de Cordoba, and it is superbly balanced. The green notes of lamb's lettuce and broad-leaf greens with red tomato in the background create a profile I often use in tastings to show that a blend can be just as expressive as a single-variety oil. The astringency and the light peppery finish give it a structure that invites you to keep tasting.

Parqueoliva Serie Oro is the flagship blend from Almazaras de la Subbetica, the cooperative in Carcabuey that also produces Rincon de la Subbetica. It is 80% Hojiblanca and 20% Picuda, both protected under the DOP Priego de Cordoba -- one of Spain's most demanding designations of origin. Only olives from Carcabuey, Priego de Cordoba, Fuente Tojar and Almedinilla are admitted.
A coupage is a deliberate flavour design: blending varieties to achieve something neither could deliver alone. Here, Hojiblanca provides structure and character; Picuda completes the picture with elegant sweetness. The olive groves stand on limestone soils under a continental Mediterranean climate, and harvest runs from October to January. This blend has been refined for over two decades.

Extra virgin olive oil is a fresh product. Its quality depends on proper storage and consuming it within its optimal date. If an online shop does not tell you which lot it will ship or when it expires, you have no way of knowing if what you receive is from this harvest or two years ago.
Be wary of shops that do not publish this information. We show it because we believe you have the right to know exactly what you are buying.
Like any quality extra virgin, ideally consume it within 4–6 weeks after opening. Store it in a cool, dark place, well sealed. Light and heat are its main enemies.
