A coupage is the deliberate combination of two or more olive varieties to create an organoleptic profile that no single variety could achieve on its own. It is the olive oil equivalent of assemblage in wine: not a shortcut, but craftsmanship. Some of the most awarded oils in the world are signature blends.
What sets a signature blend apart from an industrial mix?
Not everything labelled "coupage" or "blend" is the same. The distinction is fundamental and directly affects what is in the bottle:
Signature blend: the varieties come from the same estate or carefully selected farms, are harvested at their optimal moment, and are assembled to achieve a specific profile. The producer can tell you exactly what is in it, in what percentage, and why. The result is an oil with its own identity that remains consistent season after season.
Industrial mix: oils from various origins, harvests, and quality levels, blended to homogenise and cheapen the product. The label says "blend of EU oils" and little else. There is no intention to create a profile — the goal is to cut costs and standardise a product that is always the same, regardless of the raw material.

What is the sensory profile of a coupage?
It varies depending on the varieties and proportions, but a good Andalusian coupage typically has:
- A sweet, approachable entry — usually contributed by Hojiblanca or Arbequina
- Complex aromas: grass + fruit + almond in distinct layers that reveal themselves gradually
- Bitterness and pungency present but moderate and well integrated — thanks to Picual
- A long, balanced finish
The beauty of a coupage is that each variety contributes what the others lack. Picual provides structure, stability, and polyphenols. Arbequina provides sweetness and approachable fruitiness. Hojiblanca provides roundness and balance. Picudo provides aromatic expressiveness and floral notes.
There are two-variety blends — simpler, where the contrast between them takes centre stage — and blends of three, four, or even eleven varieties (such as the Summa Varietalis by Castillo de Canena, which combines eleven varieties from five countries). Complexity depends not on the number of varieties but on how they are combined.

A practical tip: when reading a coupage label, check whether it specifies the varieties and their percentages. If it does, that is a sign of transparency and that the producer has a specific profile in mind. If it does not, ask yourself why.
How is a coupage designed?
The mill master harvests and mills each variety separately, tastes them individually, and then experiments with proportions until finding the desired balance. It is not random: it is a process of trial and error that requires experience, a trained palate, and deep knowledge of each variety.
Some olive oil mills repeat the same proportions year after year. Others adjust depending on the season — if in a given year the Arbequina is more aromatic or the Picual milder, the proportions change to maintain the target profile.
How to use coupage olive oil in the kitchen?

Pairings where a balanced coupage shines:
- Salads and vegetables of all kinds (raw)
- Sofrito, stews, and braises (in cooking)
- Bread with tomato or on its own (as a starter)
- Finishing dishes: rice, pasta, creams, soups
- Eggs: fried, in a tortilla, scrambled — the universal companion
- White meats: chicken, turkey, rabbit
Why is a coupage worth it?
The mill master's skill lies in knowing how to combine varieties to create something greater than the sum of its parts. It is not a shortcut: it is craftsmanship accumulated over generations.
