The Frantoio olive—together with Coratina—is one of Italy’s most cultivated varieties. It is especially iconic in Tuscany, shaping the landscapes and aromas we associate with the region in the popular imagination.

In recent years, some growers have introduced the variety to the northern areas of Jaén. Frantoio extra virgin olive oil is distinctive for its balance, bitter-almond notes, and a chilli-like pungency reminiscent of Hojiblanca.

This Oro Bailén Frantoio is an exclusive, refined oil made solely from Frantoio olives. A single-varietal that forms part of the Oro Bailén monovarietal family (Villanueva de la Reina), it offers excellent value for money, appreciated for its rounded profile and differentiation from other Jaén EVOOs.

From the Tuscan Hills to the World


The history of Frantoio dates back to the 15th century, when Florentine merchants used it as currency. Today, its cultivation extends from Jaén to California, although it retains its essence in calcareous soils and cool climates. "It's a diva of the olive tree," jokes Giovanni Ricci, a Tuscan producer. "It demands precision: early harvest (October-November) and cold milling in less than six hours. But the rewards are worth the effort."

A Symphony of Flavors


When you open a bottle of Frantoio Premium, the first impression is visual: emerald green with golden highlights. On the nose, it displays notes of freshly cut grass and
banana, highlighting the bitter almond nuances that remind us of the fruits
dry roasted or with almond liqueur. It starts sweet, then develops an elegant bitterness and lingering spiciness that enhances the food without overpowering it.

This chemical balance—66.9% oleic acid, 141 mg/kg of polyphenols—makes it unique. Research from the University of California (2022) reveals that its oleocanthal, an anti-inflammatory compound, reaches concentrations 40% higher than other varieties.

Beyond gastronomic pleasure, Frantoio has scientific credentials.
