Axioma is a Picual from Villacarrillo, between the Sierra de Cazorla and the upper Guadalquivir. Clean, straightforward, with the classic varietal profile well executed: grass, tomato plant, green almond, cold extraction and same-day milling. It is an oil that delivers exactly what it promises, without artifice, and in the world of EVOO that holds real value.
Know every detail

Villacarrillo lies in the Las Villas district, between the Sierra de Cazorla and the upper Guadalquivir. Axioma works there with Picual olives in two lines: early harvest and optimal ripeness harvest. What they share: the olives are milled the same day and extraction is cold.
This is a clean, straightforward Picual from Jaen. The aromatic profile follows the classic line of the variety: fresh-cut grass, green almond, artichoke and green banana. It is an oil with well-defined fruitiness and a balance between bitter and pungent that makes it versatile both raw and for cooking.

The early harvest is picked earlier, while the olive is still green. It has more polyphenols and more intense aromas, but lower yield. The Picual at optimal ripeness is more balanced and mild.
