Elogio is the echo of three generations of an olive-farming family in the Sierra de Cazorla. Grandfather Manuel laid the foundations, his son Celedonio kept the faith, and his grandchildren — Celedonio and Angel Noguera Martinez — have made the leap to premium production. The olive trees are in the Paraje de las Hoyas, within the protected natural area of the Sierra de Cazorla, the largest protected area in Spain.
High-mountain olive growing. That is not an adjective: it is a fact that defines the oil. At that altitude ripening is slower, polyphenols accumulate, and aromas intensify. Elogio is produced as an early harvest in the first days of October and has a high polyphenol content.
The profile is highland Picual: intense fruitiness, with notes of fig tree, olive leaf, green almond, tomato plant, and artichoke. Bitterness and pungency with presence but well harmonised. An oil guaranteed by the DOP Sierra de Cazorla — a designation of origin that demands specific quality standards.
