If the Gran Seleccion is Jabalcuz's jewel, the Cosecha Temprana is the workhorse. Same origin, same commitment to green harvesting, but designed for everyday use. It is the oil I recommend to anyone who wants real cooperative quality at a price that lets you use it without remorse. And that a cooperative of over a thousand members achieves this is something that deserves recognition.
Know every detail

Jabalcuz is a cooperative in Los Villares, Jaen, born in 2004 from the merger of San Juan Bautista and Nuestra Senora del Rosario, two historic cooperatives in the village. If the Gran Seleccion is the cooperative's jewel, the Cosecha Temprana is the workhorse: same origin, same commitment to green harvesting, but made for everyday use.
Early harvest means picking the olives while they are still green, between October and November. At that point the olive yields less oil -- the extraction rate drops -- but more polyphenols and more complexity. More kilos of olives are needed per litre. The cooperative sits at the foot of the Sierra de la Pandera, at an altitude that makes a difference with every harvest.
Behind this oil stands the same cooperative that has won three consecutive Jaen Seleccion awards and a Mario Solinas from the International Olive Council. The awards belong to the Gran Seleccion, but the Cosecha Temprana comes from the same village, the same olive groves and the same technical team. The track record backs every bottle.
If the Gran Seleccion is made to impress, this one is for every day. A serious Picual, with the cooperative's track record behind it, but at a level that lets you use it daily without guilt. It is the workhorse that every pantry deserves.
