About this oil

This oil, in full

Everything behind the numbers — the varietal, the estate, the milling, and how to taste it.

A single-estate extra virgin olive oil, cold-milled and tasted blind before it reaches the shelf.

Who produces Oro de Canava?
The Cooperativa Nuestra Senora de los Remedios, in Jimena, Jaen. Founded in 1976, it has 750 members and operates under the Sierra Magina Designation of Origin.
What is the Sierra Magina D.O.?
A protected designation of origin grouping producers in the Sierra Magina region of Jaen. It guarantees that the oil is produced and bottled in the area, with quality controls by the regulatory council.
What awards does Oro de Canava have?
Premio Alimentos de Espana, Mario Solinas Award from the International Olive Council, Jaen Seleccion 2026, Gran Picual at Expoliva 2026 and top score in the Iberoleum 2026 guide.
How does it differ from other Picuales from Jaen?
The terroir of Sierra Magina -- at higher altitude, with greater thermal amplitude -- produces a Picual with a distinctive aromatic complexity: mint, fig tree and nuances you won't find in Picual from the Guadalquivir valley.
What does it mean that it's a cooperative?
That 750 olive-growing families from Jimena pool their production. It's a model that ensures a fair price for the farmer and economic sustainability for the village.
Which dishes does it go best with?
It's an intense Picual with progressive pungency. Ideal raw over toast, gazpacho, hearty salads, legumes and grilled vegetables. It also holds up well in cooking.
What is a solidarity edition?
Each year Oro de Canava produces a solidarity edition of bottles whose proceeds go to social causes -- in 2026, to the Provincial Federation of Alzheimer's Associations of Jaen.
