Everything behind the numbers — the varietal, the estate, the milling, and how to taste it.

Lechin de Granada is one of those forgotten varieties. While Picual dominates and Arbequina takes over supermarkets, Lechin is only grown in Granada, Almeria and Murcia -- less than 3% of Spain's olive-growing area. It is a variety native to the Alpujarra of Granada, whose name comes from the milky appearance of the flesh. Finding an organic single-variety Lechin oil is a true rarity.

The Alonso family cultivates it on the El Vicario estate, in the Tabernas desert. Same organic certification since 1999, same extreme conditions of less than 180 mm of rain per year. Lechin has a high fat yield and an oleic acid content of 74-76%. The harvest is early and the milling is done with the utmost care.

La Lechín de Granada es una de esas variedades olvidadas, y encontrar un monovarietal ecológico es una rareza que merece atención. Este de Oro del Desierto tiene unas connotaciones especiadas que le dan un carácter propio —la almendra verde, la cáscara de plátano, las espinacas—, en boca es muy equilibrado, con esos matices a rúcula y madera verde, que dejan la boca fresca y agradable. Es el aceite que saco en las catas para demostrar que hay vida más allá de las variedades más conocidas.

What variety is Lechín?
Lechín de Granada is a minority olive variety, native to the Alpujarra region of Granada. It is only grown in Granada, Almería and Murcia. Its name comes from the milky appearance of the pulp. It is also known as Cuquillo in some areas.
Why is Lechín olive oil so hard to find?
Because it is grown on less than 3% of Spain's olive-growing land. Most mills blend Lechín with other varieties in their coupages. An organic Lechín single-variety oil is a rarity — very few producers have enough Lechín trees to bottle it separately.
What does Lechín taste like?
It is a very well-balanced oil. On the nose you get green apple, banana peel and green almond, with spicy undertones. On the palate it has a smooth entry, with arugula and green wood notes, and a fresh finish. Neither bitterness nor pungency dominates — everything is in proportion.
What dishes pair well with Lechín?
It is one of the most versatile oils you will find. Its balance makes it perfect for fish, grilled vegetables, salads, and especially for those just beginning to explore the world of extra virgin olive oil. It does not overpower delicate flavours.
Is Lechín lower quality than Picual?
No. They have different profiles. Picual has more polyphenols and greater oxidative stability (longer shelf life). Lechín has a higher fat yield (22–27% versus 16–22% for Picual) and a smoother, more complex sensory profile. It is not better or worse — it is different, and it deserves to exist.
Is this oil suitable as a gift?
Absolutely. Precisely because it is such an unknown variety, gifting a Lechín carries a sense of discovery that a Picual or Arbequina simply does not. It is the gift for someone who has "tried everything".
