Tasting notes
An intense aroma of green leaf, with notes of green tomato, artichoke and green wood. Touches of green almond and aromatic herbs emerge. On the palate it enters sweet, then a mild bitterness appears and finally a pungency reminiscent of chilli pepper makes itself felt. The aftertaste is of green dried fruits and endive.
Pairing
Ideal for finishing cold soups and creams when you want to add a spicy touch. For toasts with Ibérico ham and mild cheeses, giving them a different edge. For finishing grilled or charcoal-roasted vegetables, as well as hummus or guacamole. Salmorejos with Rincón de la Subbética are out of this world!
Behind this oil are more than 7,000 farming families and olive trees that in some cases are a thousand years old. The aroma of green leaf with artichoke and green wood is intense and complex, and on the palate that transition from sweet to bitter to chilli-like pungency is very well resolved. It is the most awarded organic olive oil in the world, and when I taste it I understand why: there is an honesty in the product that cannot be manufactured, only cultivated.

Behind this oil is a cooperative of more than 7,000 farming families who cultivate 15,000 hectares of olive groves in the Sierras Subbéticas Natural Park, in Carcabuey, Córdoba. Centuries-old olive trees — some over a thousand years old — in calcareous soils at over 600 metres altitude, with cold winters and dry summers. Perfect conditions for the Hojiblanca variety.
A Hojiblanca monovarietal with organic certification and DOP Priego de Córdoba. Early harvest — the first olives of the season — and cold extraction on the same day as picking. The intense green oil that results from these conditions is proof of what the variety can deliver when soil, altitude and process are aligned.

Only the Picuda, Hojiblanca and Picual varieties are permitted, and the entire production process must meet strict quality standards. It is not a decorative label — it is a guarantee backed by real controls.
Yes. Rincón de la Subbética has accumulated over 720 international awards since 2004 and has been recognised as Best EVOO in the World in multiple editions of the leading rankings (WREVOO, EVOO World Ranking, World Cup 48 Kilates). No other olive oil in history has a comparable record.
Because the cooperative decided to produce its flagship oil without pesticides, herbicides or synthetic fertilisers. Organic certification involves annual inspections of soils, water and fruit. The olive groves are within the Sierras Subbéticas Natural Park, a protected environment where organic production is consistent with landscape conservation.
100% Hojiblanca. It is a single-variety oil, not a blend. Hojiblanca is a variety native to central Andalusia that produces complex oils with intense green character and a balance of bitterness, pungency and sweetness that few varieties can match.
They are two very different oils from the same cooperative. Rincón de la Subbética is an organic single-variety Hojiblanca — more intense, greener, more complex. Parqueoliva Serie Oro is a blend of Hojiblanca and Picuda — more balanced, milder, more versatile. Both carry the DOP Priego de Córdoba.

It is a cooperative — Almazaras de la Subbética — made up of over 7,000 farming families cultivating 15,000 hectares of olive groves in Carcabuey. It was formed in 2007 from the merger of two historic cooperatives, one of which was founded in 1954. It is the largest olive oil cooperative in Andalusia.
