Is it a wine vinegar with quince flavour?
No. It's made directly from quince -- the fermented fruit converted into vinegar -- not a wine vinegar with added flavour. The quince variety is Zagrilla, native to the Cordoban Subbetica.
How do I use it in cooking?
In salads and vinaigrettes (it replaces wine vinegar for a softer touch). In boquerones en vinagre. In marinades for white meats and poultry. In dessert sauces. Even in cocktails. A few drops and the dish transforms.
Is it sweet or acidic?
Both. It's a semi-sweet vinegar -- bittersweet -- with much less acidity than wine or Jerez vinegar. It has the notes of the original fruit: compote, dried fruits, white flowers.
Is it organic?
Yes, it has organic certification.
