At Molino y Cata, we organize extra virgin olive oil tastings in our olive oil shop in Granada, just two minutes from the Cathedral. The experience is led by Mercedes Uceda , an expert in sensory analysis of olive oils and professor at the University of Jaén, along with Jerónimo Palacios , co-founder of Molino y Cata and a specialist in the olive oil sector.

You don't need to know anything about olive oil to participate. Just come with a desire to discover something new. Most of our visitors leave surprised by everything they are able to perceive with a little guidance: aromas of grass, tomato, almond, banana... and a completely new way of understanding a product we use every day.

What is the experience like?

We tasted between four and six extra virgin olive oils of different varieties and origins: Picual from Jaén, Arbequina, Hojiblanca, Frantoio from Granada, and other lesser-known varieties. The selection changes depending on the season and availability, so each tasting is different.

This isn't a theoretical lecture: it's a sensory experience where you're the star. You smell, taste, compare, and discover your preferences. Mercedes guides you step-by-step through the phases of professional tasting—the same methodology used by official tasting panels—but adapted so that anyone can enjoy and learn from it.

We begin by warming the glass between our hands, releasing the aromas of the oil. Then we move on to the olfactory phase, where we identify nuances such as freshly cut grass, green tomato, artichoke, and almond. In the gustatory phase, we discover the fruitiness, bitterness, and spiciness—the three positive attributes of extra virgin olive oil. And finally, we compare all the oils so that each participant can identify their favorites.

It also includes a surprising pairing with three foods so you can see the flavors that come from consuming a premium extra virgin olive oil raw.

What you will learn

Distinguishing authentic extra virgin olive oil from one with defects. You'll learn to use your nose and palate to identify whether an oil truly meets the category stated on its label. This is one of the most impactful moments for participants.

Recognizing varieties. You'll taste oils made from Picual, Arbequina, Hojiblanca, and other varieties, and discover that the differences are as marked as between a Tempranillo and a Garnacha red wine. By the end, you'll have your favorites clearly identified.

Understanding fruitiness, bitterness, and spiciness. These three attributes are the foundation of sensory analysis of olive oil. You will learn what they mean, why they are positive, and how to evaluate them in every oil you taste.

Choosing oil wisely. After this tasting, you'll know how to read a label, interpret tasting notes, and choose the right oil for every use in the kitchen. It's knowledge that will stay with you for life.
