Deep green colour. Strikingly intense green fruit on the nose, with aromas of olive leaf, green apple, tomato leaf and fig tree. On the palate, fresh, with bitterness and pungency present yet very well balanced. Long finish of arugula and artichoke.

Aceites Elizondo is a family business with a rich tradition in extra virgin olive oil (EVOO) production, located in Torreperogil, Jaén. Its century-old estates stretch from the Sierra de Cazorla to La Loma, in the Guadalquivir Valley, where they primarily grow the Picual and Royal de Cazorla olive varieties. This family legacy has allowed Aceites Elizondo to combine traditional methods with innovative techniques to offer olive oils of exceptional quality.

Among its notable products are "Elizondo Nº 3," a Picual variety EVOO, and "Elizondo Royal," made with the native Royal de Cazorla variety. The company has also developed its "Luxury" line, which includes oils infused with ingredients such as black truffle, black garlic, and dark chocolate, adding a gourmet and sophisticated touch to its products.

About the variety

Olive Picual

The Picual olive is the most common variety to produce Extra Virgin Olive Oil in the province of Jaén. It represents 80% of the world's olive plantations and is an agricultural treasure that accounts for 20% of the world's olive oil.

This variety, native to the province of Jaén, not only defines the seas of olive trees seen after crossing Despeñaperros, but is also key to the gastronomy, nutrition, and health of the Mediterranean diet.

From Jaén to the plate

Its characteristic teardrop shape and a small peak at its base give this variety of olive its name.

The Picual variety is harvested to obtain the so-called Premium Oils between October and mid-November, from then until December They obtain the Extra Virgins Its secret lies in its unique combination of flavor and health: oils with notes of summer gardens: tomato plant, fig leaf, olive leaf, freshly cut grass, and green pepper.

Its distinctive black pepper aroma hints at the potent character of its flavor. EVOO has a distinct bitterness and spiciness, thanks to the polyphenols it contains, which give it great stability and its healthy properties.
