Introduction to Pago de Peñarrubia

Family tradition and ecological innovation

Pago de Peñarrubia is a brand of organic extra virgin olive oil which represents the perfect fusion between centuries-old tradition and sustainable innovation. Located in Hellín, Albacete This family estate has been cultivated by more than five generations dedicated to olive groves, becoming one of the benchmarks of Spanish organic EVOO. Founded in 2014 by Juan Olivares and his family, the brand was born with a clear purpose:to prepare one of the best extra virgin olive oils in the world, taking care of every detail of the process, from the tree to the bottle.

The natural environment where Pago de Peñarrubia is located - on the slopes of the Sierra de Segura, with an extreme continental climate and limestone soils - contributes to its oilsunique organoleptic characteristics: complex aromas, balance in the mouth and exceptional freshness. This privileged terroir, combined with an early harvesting and immediate milling(less than 3 hours from the olive tree to the mill), guarantees a product of the highest quality.

The farm works under strict principles of certified organic farming Since 2019, although the sustainable philosophy has been present from the beginning. Here, not only is oil grown: biodiversity is also protected through practices such as the use of geese to control weeds without chemicals, black truffles are cultivated with mycorrhizae, and circular economy principles are applied, reusing byproducts from the oil mill as natural fertilizer. The result is an EVOO with ecological soul, committed to the environment and agricultural legacy.

The oil mill is integrated within the farm itself, which allows for atotal control of the production processand impeccable traceability. Each variety of olive —Arbequina and picual— is produced separately, cold-extracting the pure juice from the olive without additives or chemical processes. All of this makes Pago de Peñarrubia a real payment in the noblest sense of the term: a farm with its own identity, artisanal care and sensorial excellence.

Organic EVOOs: balance, intensity and unique character

Pago de Peñarrubia offers a very careful range of organic extra virgin olive oils, with three distinct expressions that reflect both the richness of the olive grove and the precision of its production: a Arbequina single-variety, a Picual single-variety and one coupage composition of both. All of them are presented in elegant dark glass bottles, in 250 ml and 500 ml formats, and are recommended for raw use to fully enjoy their sensory qualities.

The Organic Arbequina EVOO stands out for its ripe fruitiness, with sweet notes of banana, nuts and flowers, perfect for those looking for a smooth and elegant oil. For its part, the Organic Picual It is more intense and herbaceous, with nuances of green tomato, olive leaf and green almond, ideal for dishes with personality. Finally, the coupage combines the best of both varieties, resulting in a round, versatile and balanced oil.

The quality of these oils has been recognized in the most prestigious competitions in the world. Pago de Peñarrubia has obtained multiple awards.gold medals at Ecotrama, has been finalist in the Spanish Food Awards, and has stood out in competitions such as NYIOOC (New York),Olive Japan,BIOL (Italy) and Expoliva (Jaén). Critics like José Carlos Capel, media such as Olive Oil Times, and chefs like David de Jorge have praised the aromatic profile, balance, and authenticity of these organic oils from Albacete. All of this confirms that Pago de Peñarrubia is not just an excellent extra virgin olive oil, but a proposal gastronomic and ethical: a product of exceptional flavor that respects the environment, the craft, and the demanding consumer.
