Every oil that enters our shop has been through a professional tasting led by Mercedes Uceda. Being extra virgin is not enough — it must have aromatic intensity, balance, complexity and a total absence of defects. Only those that clear that bar make it to the menu.

We work directly with producers from Jaen, Cordoba, Granada and other olive-growing regions of Spain. We know every estate, every variety and every harvest. That allows us to guarantee that what you receive is exactly what we tasted ourselves.
